I have recently purchased a STR-DE595 Amp and have found it hard to set it up for optimum performance.
My main problem is any speaking during movies (dvd's) is very low and then when there is any action or music scenes its very loud.
can anyone help me? I'm sure its just a matter of tweeking some settings but not sure what I should change.

I've found this to be a problem during my Pro-Logic / Laser Disc days. I was constantly raising the volume during dialog and lowering it during action scenes.
Since switching over to Dolby Digital, I've don't notice this problem as much, however it's still present.
One of the few things that you can do is to re-calibrate the sound coming from your 5.1 system again and see if you notice a difference.

Permanence,
Hello and welcome. The problem of the sound being low during dialog and then being very loud during action scenes while playing DVD's is not uncommon. It has less to do with your STR-DE595 and more to do with the way the DVD's are recorded in the first place. There is little you can do to change this. One thing you can try next time your watching a DVD movie, switch your sound field to "Night Mode" on your receiver. In this mode you will be able to hear the dialog clearly at lower levels so the action scenes won't be turned up as loud.
